What is the secret to creating scrumptiously delicious chocolate chip cookies?

I love to bake, and I especially love making homemade cookies.


I can never seem to get the chocolate chip cookies quite right though.


Does anyone have a recipe that will have everyone saying 'WOW! That's delicious!'?

Anna Olson from the TV show SUGAR has the best, the hands down, tastiest choc chip cookies. Their chewy, and better than mrs. vickies or any other cookie company. Here is the recipe. I don't normally do TV recipes, cause their normally garbage, but this one ROCKS!!!











My secret ingredient is cornstarch to make chewy-centred cookies! If you want crispy cookies, omit the cornstarch and replace the baking soda with baking powder.


Ingredients:


Chocolate Chip Cookies


3/4 cup unsalted butter, softened


1 cup brown sugar


1/4 cup granulated sugar


1 egg


2 tsp vanilla extract


2 cups all purpose flour


2 tsp cornstarch


1 tsp baking soda


1/2 tsp salt


8 oz bittersweet chocolate, cut into chunks





Directions:


Chocolate Chip Cookies


Preheat oven to 350 F.


Cream together butter and sugars until smooth. Add egg and vanilla and blend in.


Stir in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.


Drop by tablespoons onto a greased baking sheet and bake for 8-10 minutes, until golden brown around the edges.

Use 2 egg yokes instead of 1 whole egg.


Use Frangelica Liquor instead of vamilla extract

2 1/2 c Oatmeal


1 cup brown sugar


2 eggs


2 c flour


1 tsp baking powder


2 cups milk chocolate chips


1 cup butter


1 cup sugar


1 tsp vanilla


1/2 tsp salt


1 tsp baking soda


4 oz grated hershey bar





Measure oatmeal and blend in a blender to a fine powder. Cream butter and both sugars. Add eggs and vanilla. Mix together flour, oatmeal, salt, baking powder, and soda. Bake for 10 min at 375 degrees.





**the key to any cookie is not over cooking them. Take them out while they are still a little gooey in the middle and they will firm as they cool and won't be hard!
Apple Tart is right! Specifically step #3. Most people overcook chocolate chip cookies. If you don't take them out till they're brown, it's too late. Catch them just as they're beginning to turn brown on the edges.





And use the silicone baking sheets on top of your cookie sheets because they cause cookies to stop baking as soon as they're removed from the oven. Metal cookie sheets allow for additional cooking as long as the cookie sheet is still hot.
I just use the standard Toll House recipe on the back of a chocolate chip bag. I replace the margarine/butter with butter-flavored Crisco, it tastes more like butter in baked goods than butter! I decrease the amount of white sugar by 1/2 cup and then add 1 4-oz. package of instant vanilla pudding. Roll the cookies into a ball and bake as directed on the package. The cookies stay very soft (they NEVER get hard) and they taste very rich, buttery, and chocolatey!
Any basic recipe will work as long as you have the technique down.


(1) ALWAYS mix your dry ingredients and your wet ingredients separately. Sift your flours, baking soda, baking powder etc together. Then use a mixer to mix your butter, eggs, sugar (okay, I know sugar is dry, but it gets mixed in with the wet stuff!) and vanilla. Once both are thoroughly combined, you can mix the wet and dry together.


(2) Add your chocolate chips after the wet and dry are well mixed. Whether the recipe calls for it or not, I always add oatmeal because oatmeal chocolate chip cookies are so good!


(3) Don't overcook them. Most chocolate chip cookies need only 8 - 11 minutes. They should look underdone when they come out of the oven but when they are cooled, they will be cooked, chewy, and have an amazing taste and texture.


(4) Don't be afraid to experiment. Recipes are more like guidelines! Try a mint extract instead of vanilla or butterscotch chips instead of chocolate. Keep tweaking until you have something you like.

combine together

bake 350 for 10 mins.

Basic toll house one is what I';ve always used.


Just made some.





3/4 cups of butter


3/4 cups of sugar


3/4 cups of brown sugar


combine together


then add in


2 eggs


1 tsp of vanilla


1/4 tsp of salt


1/2 tsp of baking soda, dissolved in 1/2 tsp of water


mix well


add in


2 1/4 cups of flour


amount of chocolate chips you like.(add as little or as many as you like, it won't screw up the recipe)


add nuts if you like





Drop by spoonful onto parchment lined cookies sheets, bake 350 degree oven until soft and golden, take them out before they are brown, they continue to bake after you take them out.





Now my trick for all cookies is to use at least 4 cookie sheets...this way you always have 2 in baking and 2 out cooling and loading up with your next batch. You never want to load up hot cookie sheets..the batter will spread.


Always line your sheets with parchment paper, you'll never burn another cookie again. And you can line once, bake, and load up again using the same sheet of parchment paper.


Also in my oven chocolate chips cookies take 12 minutes. At 6 minutes into baking time, I switch the top sheet with the bottom sheet and I turn them 180 degrees to get an even baking.


Mine are just about done at 12 minutes, but I take them out as they will continue to bake! I transfer immediately to baking racks and let the cookies cool.

In addition to the above- the secret is to use silpats baking liners on the cookie sheets- bakes them perfectly every time!
